Ingredients

  • 2 cups Shredded cooked chicken
  • 1 cup Shredded cheddar or Monterey Jack cheese
  • 2 tablespoons Cream cheese, softened
  • 1 4-ounce can Diced green chilies (canned, drained)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 12 Corn tortillas
  • 0 Olive oil cooking spray

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

Step 2

In a large mixing bowl, combine the shredded chicken, shredded cheese, cream cheese, diced green chilies, ground cumin, paprika, garlic powder, salt, and pepper. Mix well until fully combined.

Step 3

Warm the corn tortillas slightly to make them pliable. You can microwave them in batches, wrapped in a damp paper towel, for about 20-30 seconds.

Step 4

Take one tortilla and place about 2-3 tablespoons of the chicken mixture slightly off-center. Roll the tortilla tightly into a flauta shape (a thin cylinder). Place the seam side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.

Step 5

Once all the flautas are assembled, lightly spray the tops with olive oil cooking spray. This will help them crisp up in the oven.

Step 6

Bake in the preheated oven for 18-20 minutes, or until the flautas are golden brown and crispy, turning them over halfway through baking to ensure even browning.

Step 7

Remove from the oven and let cool for a few minutes. Serve warm with your choice of toppings and dipping sauces, such as guacamole, sour cream, or salsa.
