Ingredients

  • 3 medium Potatoes
  • 1 cup Frozen peas
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Ground coriander
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Ground turmeric
  • 0.5 teaspoon Chili powder
  • 1 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Fresh cilantro, chopped
  • 8 sheets Phyllo pastry sheets
  • 4 tablespoons Melted butter

Directions

Step 1

Peel and dice the potatoes into small cubes. Boil them in salted water until tender, about 10 minutes. Drain and set aside.

Step 2

Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add cumin seeds and let them sizzle for about 30 seconds.

Step 3

Add the ground coriander, garam masala, turmeric, chili powder, and salt. Stir for another 30 seconds to bloom the spices.

Step 4

Add the cooked potatoes and frozen peas to the skillet. Stir to combine, mashing lightly to create a chunky filling. Cook for 2-3 minutes.

Step 5

Remove the skillet from the heat and mix in the chopped cilantro. Allow the filling to cool to room temperature.

Step 6

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 7

Lay one phyllo pastry sheet on a clean surface and lightly brush it with melted butter. Place a second sheet on top and brush again with butter. Cut the stacked pastry sheets into 3 long strips.

Step 8

Place a tablespoon of filling at the bottom of one strip. Fold the corner of the strip over the filling to form a triangle. Continue folding, maintaining the triangle shape, until the strip is fully wrapped. Repeat with the remaining strips and filling.

Step 9

Place the samosas on the prepared baking sheet and brush the tops with melted butter.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the samosas are golden brown and crisp.

Step 11

Allow to cool slightly before serving. Enjoy your oven-baked vegetarian samosas with mint chutney or tamarind sauce!
