Ingredients

  • 2 pounds Beef round steak
  • 1 cup All-purpose flour
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 tablespoons Vegetable oil
  • 1 large Onion
  • 3 Garlic cloves
  • 14.5 oz Canned diced tomatoes
  • 1 cup Beef broth
  • 1 cup Sour cream
  • 1 teaspoon Paprika
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Trim any excess fat from the beef round steak and cut it into serving-sized portions.

Step 3

In a shallow dish, mix the flour, salt, and black pepper. Dredge each piece of steak in the flour mixture, coating it well on all sides.

Step 4

Heat the vegetable oil in a large skillet over medium heat. Brown the steak pieces on both sides, working in batches if necessary. Set the browned steak aside.

Step 5

Peel and thinly slice the onion. Mince the garlic cloves.

Step 6

In the same skillet used for browning the steak, sauté the onion until it becomes translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.

Step 7

Add the canned diced tomatoes (with their juices) and beef broth to the skillet. Stir to combine and scrape up any browned bits from the bottom of the skillet. Let the mixture come to a simmer.

Step 8

Transfer the browned steak pieces into a casserole or baking dish. Pour the tomato and onion mixture evenly over the steak.

Step 9

Cover the dish tightly with aluminum foil and bake in the preheated oven for 2 hours, or until the steak is fork-tender.

Step 10

Carefully remove the dish from the oven. Stir the sour cream and paprika into the sauce in the dish, mixing until fully incorporated.

Step 11

Return the dish to the oven for another 10 minutes, uncovered, to heat the sauce through.

Step 12

Garnish with freshly chopped parsley, if desired, and serve hot alongside mashed potatoes or buttered noodles.
