Ingredients

  • 8 slices Rye bread
  • 1 pound Corned beef
  • 8 slices Swiss cheese
  • 1 cup Sauerkraut
  • 0.5 cup Thousand Island dressing
  • 4 tablespoons Butter
  • 1 sheet Aluminum foil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Line a large baking sheet with aluminum foil for easy cleanup.

Step 3

Spread 1 tablespoon of butter on one side of each of the 8 slices of rye bread.

Step 4

Place 4 slices of bread, butter-side down, on the prepared baking sheet.

Step 5

Spread about 2 tablespoons of Thousand Island dressing on the unbuttered side of each of the 4 slices on the baking sheet.

Step 6

Evenly divide the corned beef among the 4 slices, layering it on top of the Thousand Island dressing.

Step 7

Add 2 tablespoons of sauerkraut on top of the corned beef for each sandwich.

Step 8

Place a slice of Swiss cheese on top of the sauerkraut for each sandwich.

Step 9

Top each sandwich with the remaining slices of rye bread, butter-side facing up.

Step 10

Cover the sandwiches with another sheet of aluminum foil. Lightly press down on the foil to gently compress the sandwiches and ensure even cooking.

Step 11

Bake in the preheated oven for 10 minutes.

Step 12

Remove the top sheet of aluminum foil and bake for an additional 5 minutes, or until the bread is golden brown and the cheese has fully melted.

Step 13

Carefully remove the sandwiches from the oven and let cool for 2 minutes before serving.

Step 14

Slice each sandwich in half and serve warm with a side of pickles or potato chips, if desired.
