Ingredients

  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 3 stalks Celery, diced
  • 4 cloves Garlic, minced
  • 16 ounces Cremini or button mushrooms, diced
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh thyme leaves
  • 1 tablespoon Fresh sage, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 10 cups French or sourdough bread, cubed and slightly stale
  • 2 cups Vegetable or chicken broth
  • 2 large Eggs, beaten

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9"x13" baking dish and set it aside.

Step 2

Heat 2 tablespoons of butter and the olive oil in a large skillet over medium heat.

Step 3

Add the diced onion and celery, cooking for 5-7 minutes until softened and translucent.

Step 4

Stir in the minced garlic and diced mushrooms, cooking for an additional 8-10 minutes until the mushrooms release their liquid and it evaporates.

Step 5

Season the vegetables with the chopped parsley, thyme, sage, salt, and pepper. Stir well and remove the skillet from heat.

Step 6

Place the cubed bread into a large mixing bowl. Pour the cooked mushroom mixture over the bread cubes and toss to combine.

Step 7

Gradually pour the broth over the mixture, tossing gently to ensure the bread is evenly moist but not soggy.

Step 8

Add the beaten eggs to the mixture and carefully toss until incorporated.

Step 9

Transfer the stuffing mixture into the prepared baking dish, spreading it into an even layer.

Step 10

Melt the remaining 2 tablespoons of butter and drizzle it over the top of the stuffing.

Step 11

Cover the dish with foil and bake for 30 minutes in the preheated oven.

Step 12

Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and slightly crispy.

Step 13

Remove the stuffing from the oven and let it cool for 5 minutes before serving.
