Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 0.5 cup cooked bacon, crumbled
  • 2 stalks green onions, sliced
  • 0.5 cup sour cream (optional, for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with non-stick spray.

Step 2

Scrub the potatoes thoroughly to remove dirt, then pat them dry with a kitchen towel.

Step 3

Pierce each potato a few times with a fork and place them directly on the oven rack. Bake for 35-40 minutes, or until they are tender when pierced with a knife.

Remove the potatoes from the oven and let them cool until they are comfortable to handle, about 10-15 minutes.

Slice each potato lengthwise in half and carefully scoop out most of the flesh, leaving about 1/4 inch of potato attached to the skin. Save the scooped-out potato flesh for another recipe, like mashed potatoes or potato soup.
