Ingredients

  • 2 pieces Sirloin steak
  • 3 tablespoons Olive oil
  • 3 tablespoons Soy sauce
  • 2 tablespoons Worcestershire sauce
  • 2 cloves Garlic cloves, minced
  • 1 tablespoon Brown sugar
  • 1 teaspoon Fresh rosemary, chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper, freshly ground
  • 2 tablespoons Butter

Directions

Step 1

Pat both sirloin steaks dry with paper towels. This ensures a good sear later on.

Step 2

In a medium-sized bowl, mix together olive oil, soy sauce, Worcestershire sauce, minced garlic, brown sugar, chopped rosemary, salt, and black pepper. Stir well to combine into a marinade.

Step 3

Place the sirloin steaks into a shallow dish or resealable plastic bag, and pour the marinade over them. Make sure the steaks are fully coated. Cover the dish or seal the bag, and let the steaks marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.

Step 4

Remove the steaks from the refrigerator 15-20 minutes before cooking to allow them to come to room temperature.

Step 5

Heat a heavy-duty skillet or cast-iron pan over medium-high heat until very hot, about 3-4 minutes. Do not add any oil to the pan at this stage.

Step 6

Remove the steaks from the marinade, allowing any excess marinade to drip off (do not discard the marinade yet). Pat the steaks dry again to ensure a good sear.

Step 7

Add 1 tablespoon of olive oil to the hot skillet. Carefully place the steaks in the pan and let them sear for 3-4 minutes without moving them.

Step 8

Flip the steaks and cook for another 3-4 minutes for medium-rare, or longer for your desired doneness. Use a meat thermometer to check the internal temperature: 130°F (54°C) for medium-rare, 140°F (60°C) for medium, and 150°F (65°C) for medium-well.

Step 9

Add 2 tablespoons of butter to the skillet during the last 2 minutes of cooking. Spoon the melted butter over the steaks to baste them, adding extra richness.

Step 10

Remove the steaks from the skillet and let them rest on a cutting board for 5-7 minutes. Resting allows the juices to redistribute, ensuring a tender and juicy steak.

Step 11

While the steaks rest, pour the reserved marinade into the skillet and cook over medium heat for 2-3 minutes until slightly reduced. This will create a flavorful sauce.

Step 12

Slice the rested steaks against the grain, drizzle with the reduced sauce, and serve immediately. Pair with your favorite sides like roasted vegetables or mashed potatoes.
