Ingredients

  • 240 ml Whole milk
  • 50 g Granulated sugar
  • 2.25 tsp Active dry yeast
  • 75 g Unsalted butter (melted)
  • 2 large Eggs
  • 500 g All-purpose flour
  • 1 tsp Salt
  • 150 g Brown sugar
  • 2 tbsp Ground cinnamon
  • 70 g Unsalted butter (softened, for filling)
  • 120 g Powdered sugar
  • 60 g Cream cheese (softened)
  • 1 tsp Vanilla extract
  • 2 tbsp Whole milk (for icing)

Directions

Step 1

Warm the milk (240 ml) in the microwave or a small saucepan until it reaches about 37–43°C (100–110°F). Stir in the granulated sugar (50 g) and sprinkle the active dry yeast (2.25 tsp) on top. Let it sit for 5–10 minutes until foamy.

Step 2

In a large mixing bowl, combine the melted butter (75 g), eggs (2), and the yeast mixture. Mix well.

Step 3

Add the all-purpose flour (500 g) and salt (1 tsp) to the wet mixture. Stir until the dough starts to come together, then knead on a floured surface for 8–10 minutes until the dough is smooth and elastic. Alternatively, use a stand mixer fitted with a dough hook for 6–8 minutes.

Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1.5 hours or until doubled in size.

In a small bowl, combine the brown sugar (150 g) and ground cinnamon (2 tbsp) for the filling.

Preheat your oven to 180°C (350°F). Bake the cinnamon buns for 20–25 minutes, or until golden brown on top.

While the buns are baking, prepare the icing by whisking together the powdered sugar (120 g), softened cream cheese (60 g), vanilla extract (1 tsp), and whole milk (2 tbsp) until smooth.

Remove the buns from the oven and let them cool for 5–10 minutes before spreading the icing over the top. Serve warm and enjoy!
