Ingredients

  • 1 medium head Green cabbage
  • 0.5 medium head Red cabbage
  • 2 large Carrots
  • 3 stalks Green onions
  • 0.5 cup Mayonnaise
  • 0.25 cup Sour cream
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves from the green and red cabbages and rinse them thoroughly under cold water. Pat dry.

Step 2

Using a sharp knife or a mandoline, shred the green cabbage and red cabbage into thin strips. Place them in a large mixing bowl.

Step 3

Peel the carrots, then shred them using a box grater or a food processor. Add the shredded carrots to the bowl with the cabbage.

Step 4

Thinly slice the green onions and add them to the bowl.

Step 5

In a separate smaller bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, honey, salt, and black pepper until smooth and well combined.

Step 6

Pour the dressing over the shredded vegetables in the large mixing bowl.

Step 7

Gently toss the mixture using tongs or a large spoon until all the vegetables are evenly coated with the dressing.

Step 8

Taste and adjust the seasoning, if necessary, by adding more salt, pepper, or a little extra honey for sweetness.

Step 9

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.

Step 10

Give the coleslaw another toss before serving. Serve chilled as a side dish.
