Ingredients

  • 1 cup Orzo pasta
  • 1 pound Shrimp (peeled and deveined)
  • 3 tablespoons Olive oil
  • 3 cloves Garlic (minced)
  • 2 cups Cherry tomatoes (halved)
  • 2 cups Chicken or vegetable broth
  • 1 whole Lemon (zested and juiced)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Grated Parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Bring a medium pot of salted water to a boil. Cook the orzo pasta until al dente, about 7-8 minutes. Drain and set aside.

Step 3

In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat.

Step 4

Add the minced garlic and cook until fragrant, about 1 minute.

Step 5

Stir in the halved cherry tomatoes and cook until they soften and release their juices, about 5 minutes.

Step 6

Pour in the chicken or vegetable broth and bring to a simmer. Stir in the cooked orzo, lemon zest, and dried oregano. Season with salt and black pepper. Mix well and remove from heat.

Step 7

In a small bowl, toss the shrimp with the remaining 1 tablespoon of olive oil, paprika, lemon juice, and a small pinch of salt and pepper.

Step 8

Arrange the seasoned shrimp on top of the orzo mixture in the skillet.

Step 9

Transfer the skillet to the preheated oven. Bake for 12-15 minutes, or until the shrimp are fully cooked and pink.

Step 10

Remove from the oven and garnish with fresh parsley. If desired, sprinkle with grated Parmesan cheese.

Step 11

Serve warm and enjoy!
