Directions

Step 1

In a medium saucepan, warm the vegetable or chicken stock over low heat. Keep it warm while you prepare the orzo risotto.

Step 2

In a large skillet or heavy-bottomed pot, heat the olive oil and butter over medium heat until the butter is melted and foamy.

Step 3

Add the diced onion to the skillet and sauté for 3-4 minutes, or until softened and translucent. Stir occasionally to prevent browning.

Add the minced garlic and sauté for another 30 seconds, or until fragrant.
