Ingredients

  • 1 piece (approximately 4 lbs) Whole chicken
  • 6 cloves Fresh garlic
  • 2 tablespoons, grated Fresh ginger
  • 0.5 cup Soy sauce
  • 3 tablespoons Honey
  • 2 tablespoons Red chili paste
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 teaspoon Cayenne pepper
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Lime juice
  • 2 tablespoons, chopped Fresh cilantro
  • 2 tablespoons Canola oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the whole chicken under cold water and pat it dry with paper towels. Place it in a large roasting dish or baking pan.

Step 3

In a mixing bowl, combine garlic (minced), grated ginger, soy sauce, honey, red chili paste, rice vinegar, sesame oil, cayenne pepper, black pepper, and lime juice. Whisk together until fully blended to form the marinade.

Step 4

Rub the chicken generously with the canola oil, ensuring even coverage across the surface. Then, pour the prepared marinade over the chicken, using your hands or a basting brush to ensure it is coated evenly, including under the skin and inside the cavity.

Step 5

Let the chicken marinate for at least 30 minutes (or up to overnight in the fridge for a more intense flavor). If marinating, cover the dish with plastic wrap.

Step 6

Once marinated, place the chicken into the preheated oven, breast side up. Roast for about 75 minutes, basting the chicken with the pan juices every 20 minutes for maximum flavor and tenderness.

Step 7

Check the internal temperature of the chicken using a meat thermometer. The thickest part of the thigh should register 165°F (74°C) when cooked through.

Step 8

Remove the chicken from the oven and cover it loosely with aluminum foil. Allow it to rest for 10 minutes to retain its juices.

Step 9

Garnish the chicken with freshly chopped cilantro before carving and serving. Pair with steamed rice or roasted vegetables for a complete meal.
