Ingredients

  • 1 cup white rice
  • 1 cup button mushrooms
  • 2 tablespoons unsalted butter
  • 1 small onion
  • 2 cloves garlic
  • 1 can (10.5 oz) cream of mushroom soup
  • 1.5 cups water
  • 0.5 cups milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons chopped parsley (optional)

Directions

Step 1

Rinse the white rice under cold water until the water runs clear. Set aside.

Step 2

Finely chop the onion and garlic. Clean and slice the button mushrooms into thin pieces.

Step 3

In a medium saucepan, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent, about 2-3 minutes.

Step 4

Add the sliced mushrooms to the saucepan and cook for 4-5 minutes until they release their moisture and begin to brown.

Step 5

Stir in the cream of mushroom soup, water, and milk. Mix well to create a creamy base.

Step 6

Add the rinsed rice to the saucepan, followed by the salt and black pepper. Stir to combine.

Step 7

Raise the heat to bring the mixture to a gentle boil, then reduce the heat to low. Cover the saucepan with a tight-fitting lid and let simmer for 18-20 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

Step 8

Remove from heat and let the rice rest, covered, for 5 minutes.

Step 9

Fluff the rice with a fork and garnish with chopped parsley, if desired.

Step 10

Serve warm as a standalone dish or alongside your favorite protein. Enjoy!
