Ingredients

  • 2 packs dry instant ramen noodles (no seasoning packet)
  • 3 tablespoons vegetable oil
  • 3 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup grated carrot
  • 3 stalks thinly sliced green onion
  • 1 cup toasted slivered almonds
  • 2 tablespoons sesame seeds
  • 4 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons honey
  • 2 tablespoons sesame oil
  • 1 teaspoon freshly grated ginger
  • 2 cloves garlic (minced)
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon chili flakes (optional)

Directions

Step 1

Break the dry instant ramen noodles into small pieces and set them aside.

Step 2

Heat 3 tablespoons of vegetable oil in a large skillet over medium heat. Add the broken ramen noodle pieces and toast them, stirring frequently, for 3-4 minutes or until golden brown. Remove from heat and set aside to cool.

In a large mixing bowl, combine the shredded green cabbage, purple cabbage, grated carrot, and sliced green onions.

In a smaller skillet or dry pan, toast the slivered almonds and sesame seeds for 2-3 minutes over medium-low heat until fragrant. Be careful not to burn them. Add them to the vegetable mixture.
