Ingredients

  • 400 grams canned black beans (drained and rinsed)
  • 120 grams breadcrumbs
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 garlic clove (minced)
  • 1 teaspoon fresh ginger (grated)
  • 2 scallions (finely chopped)
  • 1 teaspoon ground cumin
  • 2 tablespoons cornstarch
  • 3 tablespoons vegetable oil (for frying)
  • 4 burger buns
  • 4 lettuce leaves
  • 8 slices sliced cucumber
  • 4 tablespoons sriracha mayo (optional)

Directions

Step 1

1. In a large mixing bowl, mash the black beans with a fork or potato masher until they are mostly smooth but still have some texture.

Step 2

2. Add the breadcrumbs, soy sauce, hoisin sauce, sesame oil, minced garlic, grated ginger, chopped scallions, ground cumin, and cornstarch to the bowl. Mix until combined and the mixture holds together when pressed.

Step 3

3. Divide the mixture into 4 equal portions and shape each portion into a patty about 1 inch thick.

Step 4

4. Heat the vegetable oil in a large non-stick frying pan over medium heat.

Step 5

5. Carefully place the patties in the pan and cook for 4-5 minutes on each side, or until they are golden brown and firm. Be gentle to avoid breaking the patties while flipping.

Step 6

6. Toast the burger buns lightly, if desired, and assemble the burgers by placing a lettuce leaf and two slices of cucumber on the bottom half of each bun.

Step 7

7. Place a bean patty on top of the cucumber slices, and optionally add a dollop of sriracha mayo for a spicy kick.

Step 8

8. Top with the other half of the bun and serve immediately. Enjoy your Oriental Bean Burgers!
