Ingredients

  • 250 grams Raw almonds
  • 450 grams Granulated sugar
  • 500 milliliters Water
  • 1 teaspoon Almond extract
  • 1 tablespoon Orange blossom water
  • 1 tablespoon Vodka (optional, for preservation)

Directions

Step 1

Start by blanching the almonds: bring a pot of water to a boil, add the almonds, and blanch for 1-2 minutes. Drain and rinse the almonds with cold water, then peel off the skins.

Once the almonds are peeled, transfer them to a food processor and pulse until the almonds are coarsely ground. Avoid over-processing; you want a chunky, rather than powdery, texture.

Step 3

In a medium saucepan, combine the ground almonds and water. Stir well and bring to a gentle simmer over medium heat. Allow the mixture to simmer for about 5 minutes, then remove it from heat and let it steep for 1 hour.

After steeping, strain the almond mixture through a fine-mesh sieve or cheesecloth into a bowl, squeezing/pressing the solids to extract as much liquid as possible. Discard the almond solids or save them for another use, like baking.
