Ingredients

  • 3 cups Organic sweet corn kernels (fresh or thawed if frozen)

  • 2 tablespoons Raw honey or organic cane sugar
  • 1 teaspoon Ground cumin
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Fresh cilantro, chopped

Directions

Step 1

Shuck fresh corn, if using, and cut the kernels off the cobs. Measure 3 cups of kernels.

Step 2

In a large skillet over medium heat, add the corn kernels. Sauté for 3–4 minutes to lightly toast them, stirring occasionally. Remove from heat and set aside.

Step 3

In a medium saucepan, combine the diced red bell pepper, green bell pepper, red onion, and jalapeño. Cook over medium heat for 2 minutes until they begin to soften.

Add the minced garlic, white vinegar, lime juice, honey (or sugar), cumin, sea salt, and black pepper to the saucepan. Stir until well combined.
