Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 2 large apples, peeled, cored, and diced
  • 2 large ripe pears, peeled, cored, and diced
  • 4 cups vegetable stock
  • 1 teaspoon fresh thyme leaves
  • 0.5 cup heavy cream
  • 0.25 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons chopped chives (optional, for garnish)

Directions

Step 1

Melt the butter in a large pot over medium heat.

Step 2

Add the chopped onion and sauté until soft and translucent, about 5 minutes.

Step 3

Stir in the diced apples and pears, and cook for another 5 minutes, stirring occasionally.

Step 4

Pour in the vegetable stock and add the thyme leaves. Bring the mixture to a boil.

Step 5

Once boiling, reduce the heat to low, cover, and simmer for 20 minutes, or until the fruit is very tender.

Step 6

Remove the pot from heat and allow it to cool slightly.

Step 7

Using an immersion blender, or working in batches with a countertop blender, purée the soup until smooth.

Step 8

Return the puréed soup to low heat and stir in the cream, cinnamon, salt, and pepper.

Step 9

Cook gently for 5 more minutes, stirring occasionally, until heated through (do not let it boil).

Step 10

Serve warm, garnished with chopped chives if desired.
