Ingredients

  • 4 pieces Oranges (preferably organic)
  • 400 grams Granulated sugar
  • 500 ml Water
  • 200 grams Dark chocolate (70% cocoa solids)

Directions

Step 1

Wash the oranges thoroughly to remove any residue from the peels, especially if they're not organic.

Step 2

Cut off the ends of the oranges, then score the peel into quarters. Carefully remove the peel, including most of the white pith.

Step 3

Slice the peels into thin, even strips about 0.5 cm wide.

Step 4

Place the orange strips in a saucepan, cover them with cold water, and bring to a boil. Boil for 2 minutes, then drain and rinse under cold water. Repeat this blanching process two more times to remove bitterness.

Step 5

In a separate saucepan, combine the sugar and 500 ml of water to create a simple syrup. Heat over medium heat, stirring occasionally, until the sugar is fully dissolved.

Step 6

Add the blanched orange peels to the syrup and reduce the heat to low. Simmer gently for about 1.5 hours, stirring occasionally, until the peels become translucent.

Step 7

Using tongs or a slotted spoon, transfer the candied peels to a wire rack set over parchment paper. Let them dry for at least 6 hours or overnight.

Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method) or in the microwave in short bursts, stirring frequently.
