Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 0.25 cup soy sauce
  • 0.5 cup orange juice
  • 1 tbsp orange zest
  • 2 tbsp honey
  • 2 tbsp brown sugar
  • 2 tbsp mirin (Japanese sweet rice wine)
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp sesame oil
  • 2 stalks green onions, sliced
  • 1 tbsp sesame seeds
  • 2 cups cooked white or brown rice

Directions

Step 1

In a medium bowl, whisk together soy sauce, orange juice, orange zest, honey, brown sugar, mirin, minced garlic, and grated ginger to create the marinade.

Step 2

Place the chicken thighs in a resealable plastic bag or a shallow dish and pour half of the marinade over the chicken. Reserve the remaining marinade for later.

Step 3

Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.

Step 4

Heat a large skillet over medium heat and add sesame oil. Remove the chicken thighs from the marinade, allowing excess to drip off, and cook them in the skillet for 5-7 minutes on each side, or until the chicken is browned and fully cooked (165°F internal temperature). Remove chicken from the skillet and set aside.

Step 5

Pour the reserved marinade into the skillet and bring it to a low simmer.

Step 6

In a small bowl, mix the cornstarch and water to create a slurry. Slowly whisk the slurry into the simmering marinade to thicken the sauce. Cook for 2-3 minutes, stirring constantly, until the sauce is glossy and slightly thickened.

Step 7

Return the cooked chicken to the skillet, turning to coat each piece thoroughly with the sauce.

Step 8

Garnish with sliced green onions and sesame seeds. Serve immediately over cooked white or brown rice.
