Ingredients

  • 4 medium Sweet potatoes
  • 0.5 cup Orange juice
  • 1 teaspoon Orange zest
  • 2 tablespoons Brown sugar
  • 2 tablespoons Butter
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 0.25 cup Pecans (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the sweet potatoes and cut them into 1-inch cubes. Place them in a large mixing bowl.

Step 3

In a small saucepan, combine the orange juice, orange zest, brown sugar, butter, ground cinnamon, ground nutmeg, and salt. Heat over low heat, stirring until the butter is melted and the mixture is well combined.

Step 4

Pour the orange spice mixture over the sweet potato cubes, tossing to coat them evenly.

Step 5

Transfer the sweet potatoes to a baking dish, spreading them out in an even layer.

Step 6

Cover the baking dish with foil and bake in the preheated oven for 25 minutes.

Step 7

Remove the foil and gently stir the sweet potatoes. Bake uncovered for an additional 15-20 minutes, or until the sweet potatoes are tender and slightly caramelized.

Step 8

If using pecans, sprinkle them over the sweet potatoes in the last 5 minutes of baking to lightly toast them.

Step 9

Once done, remove from the oven and let them cool for 5 minutes before serving.

Step 10

Serve warm as a delicious and aromatic side dish.
