Ingredients

  • 1 cup Basmati rice
  • 2 cups Water
  • 1 large Orange
  • 2 tablespoons Olive oil
  • 2 small Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 whole Cinnamon stick
  • 1 teaspoon Salt
  • 2 tablespoons Fresh parsley
  • 0.25 cup Orange juice
  • 2 tablespoons Slivered almonds
  • 2 tablespoons Raisins

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Set aside to drain.

Step 2

Zest the orange to collect about 2 teaspoons of finely grated orange rind. Then, juice the orange to extract 1/4 cup of orange juice. Set both aside.

Step 3

Heat olive oil in a medium saucepan over medium heat. Add finely minced garlic and sauté for 1 minute, until fragrant.

Add the ground cumin and cinnamon stick to the pan and stir for another 30 seconds to toast the spices.

Add the rinsed and drained rice, stirring to coat the grains in the oil and spices.
