  • 120 ml Heavy cream
  • 60 grams Unsalted butter
  • 1 teaspoon Vanilla extract
  • 150 grams Pecans, roughly chopped
  • 2 teaspoons Orange zest
  • 1 pinch Salt

Directions

Step 1

Line a baking sheet with parchment paper or a silicone baking mat and set aside.

In a medium, heavy-bottomed saucepan, combine granulated sugar, brown sugar, heavy cream, and butter.

Step 3

Bring the mixture to a boil over medium heat, stirring constantly with a wooden spoon or heatproof spatula to prevent burning.

Once the mixture reaches a boil, reduce the heat to medium-low and attach a candy thermometer to the saucepan without letting it touch the bottom.
