Ingredients

  • 1 lb Pork tenderloin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp All-purpose flour
  • 2 tbsp Olive oil
  • 1 tbsp Butter
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 8 oz Mushrooms, sliced
  • 0.5 cup Fresh orange juice
  • 1 tsp Orange zest
  • 1 cup Chicken stock
  • 0.75 cup Sour cream
  • 1 tbsp Dijon mustard
  • 12 oz Egg noodles, cooked
  • 2 tbsp Fresh parsley, chopped (for garnish)

Directions

Step 1

Slice the pork tenderloin into thin strips. Season with salt and pepper, then toss with flour to coat evenly.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the pork in batches to avoid overcrowding and sear until golden brown on both sides, about 2-3 minutes per side. Remove the pork from the skillet and set aside.

Step 3

In the same skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 4-5 minutes. Stir in the garlic and cook until fragrant, about 1 minute.

Step 4

Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they release their moisture and start to brown, about 5-7 minutes.

Step 5

Pour in the fresh orange juice and sprinkle in the orange zest, scraping the bottom of the skillet to deglaze and release any flavorful browned bits. Let the orange juice reduce slightly, about 2 minutes.

Step 6

Add the chicken stock to the skillet and bring to a simmer. Return the seared pork to the skillet and cook until the pork is tender and cooked through, about 5 minutes.

Step 7

Reduce the heat to low and stir in the sour cream and Dijon mustard until the sauce is smooth and creamy. Avoid boiling at this stage to prevent curdling.

Step 8

Taste the sauce and adjust seasoning with additional salt and pepper if needed.

Step 9

Serve the orange pork Stroganoff over cooked egg noodles, garnished with freshly chopped parsley.
