Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup orange juice
  • 1 teaspoon orange zest
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic cloves, minced
  • 3 tablespoons pine nuts, toasted
  • 2 teaspoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons optional: chopped fresh parsley for garnish

Directions

Step 1

In a small bowl, whisk together the orange juice, orange zest, soy sauce, honey, and minced garlic to create the marinade.

Step 2

Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish, and refrigerate for at least 2 hours or overnight for best results.

Step 3

When ready to cook, heat the olive oil in a large skillet over medium heat.

Step 4

Remove the chicken from the marinade (reserve the marinade) and season both sides of the chicken with salt and black pepper.

Step 5

Sear the chicken breasts in the skillet for about 3-4 minutes on each side until golden brown.

Step 6

Reduce the heat to medium-low and pour the reserved marinade into the skillet. Cover and let the chicken simmer for 15-20 minutes, turning occasionally, until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

Step 7

In a small bowl, mix the cornstarch with water to create a slurry. Add the slurry to the skillet and stir to thicken the sauce. Cook for an additional 2-3 minutes.

Step 8

Toast the pine nuts in a dry skillet over medium heat for 2-3 minutes until golden and fragrant. Stir frequently to avoid burning.

Step 9

Sprinkle the toasted pine nuts over the chicken and garnish with chopped parsley, if desired. Serve immediately or allow to cool completely if freezing.

Step 10

For OAMC (Once-a-Month Cooking), divide the chicken and sauce into freezer-safe containers, label, and freeze. When ready to eat, thaw overnight in the refrigerator and reheat in a skillet or microwave.
