  • 1 cup Water
  • 2 tablespoons Olive oil
  • 0.5 cup Yellow onion, finely chopped
  • 2 cloves Garlic, minced
  • 0.25 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Raisins
  • 0.25 cup Slivered almonds, toasted
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

Step 2

Heat the olive oil in a medium saucepan over medium heat.

Step 3

Add the chopped onion and sauté for 3-4 minutes, until it becomes translucent.

Step 4

Add the minced garlic, ground cinnamon, and ground cumin, and sauté for an additional 1 minute until fragrant.

Step 5

Stir in the rinsed rice, ensuring it is well-coated with the spices and oil.

Step 6

Add the orange zest, orange juice, water, salt, and black pepper. Stir well.

Step 7

Bring the mixture to a boil, then reduce the heat to low and cover the saucepan with a tight-fitting lid. Cook for 15 minutes without lifting the lid.

Step 8

After 15 minutes, remove the saucepan from the heat and let it sit, covered, for another 5 minutes to allow the rice to finish steaming.

Fluff the rice with a fork, then gently fold in the raisins, toasted slivered almonds, and chopped parsley.

Step 10

Taste and adjust seasoning if needed. Serve warm as a side dish or light main course.
