Ingredients

  • 1 cup Rolled oats
  • 1 cup Milk
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 1 piece Large egg
  • 0.25 cup Unsalted butter, melted
  • 1 tablespoon Orange zest
  • 2 tablespoons Fresh orange juice
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped pecans

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a small bowl, combine the rolled oats and milk. Let them soak for 10 minutes while preparing the other ingredients.

Step 3

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Set this dry mixture aside.

Step 4

In another medium mixing bowl, combine the granulated sugar, brown sugar, egg, melted butter, orange zest, orange juice, and vanilla extract. Whisk until thoroughly mixed.

Step 5

Stir the soaked oats into the wet ingredients and mix well.

Step 6

Gradually add the wet oat mixture to the dry ingredients, gently folding together just until combined. Avoid overmixing.

Step 7

Fold in the chopped pecans until evenly distributed throughout the batter.

Step 8

Spoon the batter evenly into the prepared muffin cups, filling each about three-quarters full.

Step 9

Bake the muffins in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 10

Remove the muffins from the oven and let them cool in the pan for 5 minutes. Transfer to a wire rack to cool completely or serve warm.
