Preheat your oven to 175°C (350°F). Grease and line an 8-inch round cake pan with parchment paper.

Sift the all-purpose flour into the egg mixture and gently fold it until no lumps remain.
Add 1 tablespoon of orange zest, 1 teaspoon of vanilla extract, and melted butter into the batter. Fold gently to combine.
Pour the batter into the prepared cake pan and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.
To prepare the mousse, sprinkle gelatin powder over cold water in a small bowl. Let it bloom for 5 minutes.
