Ingredients

  • 120 grams All-purpose flour
  • 150 grams Sugar
  • 5 large Eggs
  • 2 tablespoons Orange zest
  • 60 milliliters Fresh orange juice
  • 1 teaspoon Vanilla extract
  • 50 grams Unsalted butter (melted)
  • 7 grams Gelatin powder
  • 3 tablespoons Cold water
  • 300 milliliters Heavy cream
  • 200 grams Cream cheese
  • 80 grams Powdered sugar
  • 1 drop Orange food coloring (optional)
  • 4 pieces Orange slices (for garnish)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and line an 8-inch round cake pan with parchment paper.

Step 2

In a mixing bowl, beat 3 eggs and 100 grams of sugar until the mixture is pale, fluffy, and tripled in volume.

Step 3

Sift the all-purpose flour into the egg mixture and gently fold it until no lumps remain.

Step 4

Add 1 tablespoon of orange zest, 1 teaspoon of vanilla extract, and melted butter into the batter. Fold gently to combine.

Step 5

Pour the batter into the prepared cake pan and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely.

Step 6

To prepare the mousse, sprinkle gelatin powder over cold water in a small bowl. Let it bloom for 5 minutes.

Step 7

Heat the gelatin mixture over low heat or in the microwave for a few seconds until completely dissolved. Set aside to cool slightly.

Step 8

In another bowl, beat cream cheese, powdered sugar, 1 tablespoon of orange zest, and fresh orange juice until smooth and creamy.

Step 9

In a separate bowl, whip the heavy cream until soft peaks form. If using food coloring, add it during this step.

Step 10

Slowly add the dissolved gelatin to the cream cheese mixture while beating continuously.

Step 11

Gently fold the whipped cream into the cream cheese mixture to create the mousse.

Step 12

Trim the top of the cooled sponge cake to make it even, if necessary. Place the cake in a springform pan or a cake ring.

Step 13

Pour the orange mousse over the cake layer, smoothing the top with a spatula. Refrigerate for at least 4-6 hours, or until the mousse is set.

Step 14

Once the mousse is set, carefully remove the springform pan or cake ring. Garnish the top with orange slices and additional orange zest, if desired.

Step 15

Slice and serve chilled. Enjoy your delightful Orange Mousse Cake!
