  • 12 lbs whole turkey
  • 0.5 cups unsalted butter
  • 1 cups orange juice (freshly squeezed)
  • 2 tbsp orange zest
  • 0.5 cups brown sugar
  • 0.25 cups honey
  • 4 cloves garlic (minced)
  • 2 tbsp rosemary (fresh, chopped)
  • 2 tbsp thyme (fresh, chopped)
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 cups chicken or turkey stock
  • 2 tbsp cornstarch
  • 2 tbsp water

Directions

Step 1

Preheat your oven to 325°F (165°C) and position the rack in the lower third of the oven.

Remove the turkey from its packaging and pat it dry with paper towels. Remove the giblets and neck from the cavity if present.

In a small bowl, combine the softened butter, minced garlic, rosemary, thyme, salt, and pepper. Mix until well combined.

Carefully loosen the skin of the turkey by sliding your hands underneath it without tearing the skin. Spread half of the butter mixture evenly underneath the skin. Rub the remaining butter mixture all over the outside of the turkey.
