Ingredients

  • 2 cups orange juice
  • 2 cups water
  • 0.25 cups kosher salt
  • 0.25 cups brown sugar
  • 3 tablespoons fresh ginger
  • 3 units garlic cloves, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon black peppercorns
  • 4 pounds bone-in, skin-on chicken pieces (thighs, drumsticks, or breasts)
  • 2 tablespoons olive oil
  • 1 teaspoon ground black pepper
  • 1 tablespoon orange zest (optional garnish)
  • 1 tablespoon chopped fresh parsley (optional garnish)

Directions

Step 1

In a large bowl or pot, combine the orange juice, water, kosher salt, and brown sugar. Stir until the salt and sugar are fully dissolved.

Step 2

Add the fresh ginger, minced garlic, soy sauce, and black peppercorns to the brine mixture.

Step 3

Place the chicken pieces into the brine, making sure they are fully submerged. Cover the bowl and refrigerate for at least 4 hours, or ideally overnight (8-12 hours).

Step 4

After brining, remove the chicken from the liquid and pat it dry with paper towels. Discard the brine.

Step 5

Preheat your oven to 400°F (200°C). Lightly oil a baking dish or sheet pan.

Step 6

Rub the chicken pieces with olive oil and sprinkle with ground black pepper.

Step 7

Arrange the chicken on the prepared baking dish or sheet pan, skin-side up. Bake in the preheated oven for 40-50 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.

Step 8

Allow the chicken to rest for 5-10 minutes before serving.

Step 9

For garnish, sprinkle with orange zest and chopped fresh parsley if desired. Serve warm with your choice of side dishes.
