Ingredients

  • 1.5 cups Wheat bran
  • 1.25 cups Buttermilk
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 0.5 teaspoons Salt
  • 1 teaspoon Ground cinnamon
  • 0.25 cup Unsalted butter, melted
  • 0.5 cup Brown sugar, packed
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Orange zest
  • 0.75 cup Chopped dates
  • 0.5 cup Chopped walnuts or pecans

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a large mixing bowl, combine the wheat bran and buttermilk. Stir well and let the mixture sit for 10 minutes to soften.

Step 3

In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.

Step 4

In the bowl with the bran mixture, add the melted butter, brown sugar, egg, vanilla extract, and orange zest. Mix until well combined.

Step 5

Gradually stir the dry ingredients into the wet ingredients, being careful not to overmix. The batter should just come together.

Step 6

Fold in the chopped dates and nuts gently until they are evenly distributed throughout the batter.

Step 7

Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.

Step 8

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.

Step 10

Serve warm or store in an airtight container at room temperature for up to 3 days. These muffins can also be frozen for longer storage.
