  • 1 cup Dates, pitted and chopped
  • 1 cup Boiling water
  • 1 tablespoon Orange zest
  • 1 cup Fresh orange juice
  • 0.5 cup Unsalted butter, melted
  • 1 large Egg

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 0.75 cup Brown sugar, packed
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease and flour 4 mini loaf pans or line them with parchment paper.

Combine the chopped dates and boiling water in a small bowl. Let them soak for 10 minutes to soften, then mash lightly with a fork. Set aside to cool.

In a large mixing bowl, whisk together the orange zest, orange juice, melted butter, egg, and vanilla extract until well combined.
