Ingredients

  • 2 cups All-purpose flour
  • 0.25 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, cold and cubed
  • 0.5 cup Heavy cream
  • 1 large Egg
  • 1 tablespoon Orange zest
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dried currants
  • 2 tablespoons Coarse sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Cut the butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Step 4

In a separate small bowl, whisk together the heavy cream, egg, orange zest, and vanilla extract.

Step 5

Pour the wet ingredients into the dry ingredients, stirring gently with a spatula until just combined. Be careful not to overmix.

Step 6

Fold in the dried currants, ensuring they are evenly distributed throughout the dough.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick circle.

Step 8

Using a sharp knife or a bench scraper, cut the dough into 8 wedges and transfer them to the prepared baking sheet, spacing them about 2 inches apart.

Step 9

If desired, sprinkle the tops of the scones with coarse sugar for added texture and sweetness.

Step 10

Bake in the preheated oven for 13-15 minutes, or until the scones are lightly golden on the edges.

Step 11

Remove the scones from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely or enjoy warm.
