Ingredients

  • 115 grams unsalted butter
  • 150 grams granulated sugar
  • 50 grams light brown sugar
  • 2 tablespoons orange zest
  • 2 tablespoons orange juice
  • 1 teaspoon vanilla extract
  • 1 piece large egg
  • 200 grams all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon salt
  • 75 grams cornflakes cereal (crushed)
  • 100 grams white chocolate chips or chunks

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large bowl, cream together the butter, granulated sugar, and light brown sugar using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Mix in the orange zest, orange juice, vanilla extract, and the egg until well incorporated.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.

Step 5

Gradually add the dry ingredient mixture into the wet ingredients, mixing on low speed until just combined. Do not overmix.

Step 6

Gently fold in the crushed cornflakes and white chocolate chips using a spatula.

Step 7

Using a tablespoon or cookie scoop, drop heaping spoonfuls of dough onto the prepared baking sheets, spacing them about 5 cm (2 inches) apart.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes or until the edges are golden brown and the centers look slightly soft.

Step 9

Remove the baking sheets from the oven and allow the cookies to cool for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days.
