Ingredients

  • 1 cup Wheat bran
  • 1 cup All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg
  • 0.75 cup Brown sugar
  • 2 tablespoons Molasses
  • 0.5 cup Orange juice
  • 0.5 cup Milk
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Orange zest
  • 0.75 cup Dried cranberries

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the tin.

Step 2

In a large mixing bowl, combine the wheat bran, all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Stir until well mixed.

Step 3

In a separate medium bowl, whisk together the egg, brown sugar, and molasses until smooth.

Step 4

Add the orange juice, milk, vegetable oil, vanilla extract, and orange zest to the wet ingredients. Stir until everything is fully combined.

Step 5

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.

Step 6

Fold in the dried cranberries, distributing them evenly throughout the batter.

Step 7

Scoop the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 8

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Step 9

Once done, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
