Ingredients

  • 2 pounds Boneless, skinless chicken thighs
  • 0.5 cup Cornstarch
  • 3 tablespoons Vegetable oil
  • 1 cup Orange marmalade
  • 0.5 cup Soy sauce
  • 3 tablespoons Rice vinegar
  • 3 tablespoons Honey
  • 3 Garlic cloves, minced
  • 2 teaspoons Fresh orange zest
  • 0.25 cup Green onions, chopped (for garnish)
  • 1 tablespoon Sesame seeds (for garnish)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and season with salt and black pepper.

Step 2

Place the cornstarch on a plate and coat each piece of chicken evenly by dredging it in the cornstarch. Shake off any excess.

Step 3

In a large skillet over medium-high heat, heat the vegetable oil. Sear the chicken pieces for about 2-3 minutes per side, until they are golden brown. The chicken does not need to be fully cooked at this stage.

Step 4

Transfer the seared chicken to the crock pot.

Step 5

In a mixing bowl, whisk together the orange marmalade, soy sauce, rice vinegar, honey, minced garlic, and fresh orange zest to make the sauce.

Step 6

Pour the sauce evenly over the chicken in the crock pot.

Step 7

Set the crock pot to cook on low for 4 hours or on high for 2 hours, stirring the chicken halfway through to ensure even coating with the sauce.

Step 8

Once the chicken is tender and fully cooked through, turn off the crock pot and allow the dish to rest for 5 minutes.

Step 9

Serve the orange chicken over steamed jasmine rice or your choice of side. Sprinkle with chopped green onions and sesame seeds for garnish.
