Ingredients

  • 2 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.25 teaspoons salt
  • 0.75 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 2 large eggs
  • 1 tablespoon orange zest
  • 0.5 cups orange juice, freshly squeezed
  • 0.25 cups milk
  • 1 teaspoon vanilla extract
  • 0.5 cups brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 cups chopped pecans or walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch square baking pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, cream together the granulated sugar and softened butter until light and fluffy, using a hand or stand mixer.

Step 4

Beat in the eggs one at a time until fully incorporated. Then stir in the orange zest, orange juice, milk, and vanilla extract until combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

Step 6

In a small bowl, make the streusel topping by combining the brown sugar, ground cinnamon, and chopped pecans or walnuts (if using).

Step 7

Pour half of the cake batter into the prepared pan and spread it evenly. Sprinkle half of the streusel topping over the batter.

Step 8

Add the remaining cake batter on top and spread gently to cover. Sprinkle the remaining streusel topping evenly over the surface.

Step 9

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Step 10

Allow the coffee cake to cool in the pan for 10 minutes before slicing and serving. Enjoy warm with your favorite cup of coffee!
