Ingredients

  • 4 medium beets
  • 1 teaspoon orange zest
  • 3 tablespoons freshly squeezed orange juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 1 teaspoon white wine vinegar
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash the beets thoroughly under cold water. Trim off the greens, leaving about 1 inch of stems attached. Do not peel the beets at this stage.

Place the beets on a large piece of aluminum foil. Drizzle with a small amount of olive oil (not included in ingredient list) and wrap the foil tightly around the beets to create a sealed pouch.

Place the foil-wrapped beets on a baking sheet and roast in the preheated oven for about 45-50 minutes, or until you can easily pierce them with a fork.
