  • 2 whole Cornish hens
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 cloves Garlic cloves, minced
  • 1 tablespoon Fresh thyme leaves
  • 1 cup Orange juice, freshly squeezed
  • 1 teaspoon Orange zest
  • 0.3333 cup Balsamic vinegar
  • 2 tablespoons Honey
  • 0.5 cup Chicken broth

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a large roasting pan with foil or parchment paper for easy cleanup.

Pat the Cornish hens dry with paper towels and place them in the prepared roasting pan. Rub the hens with olive oil, and season both the inside and outside with salt and black pepper.

Sprinkle the minced garlic and thyme leaves evenly over the hens, rubbing them into the skin. Tuck the wingtips under the birds to prevent burning.
