Ingredients

  • 180 grams All-purpose flour
  • 1 teaspoon Ground cardamom
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 150 grams Unsalted butter, softened
  • 200 grams Granulated sugar
  • 3 Large eggs
  • 2 tablespoons Fresh orange zest (from 2 oranges)
  • 80 milliliters Fresh orange juice
  • 60 milliliters Whole milk
  • 120 grams Powdered sugar (for glaze)
  • 2 tablespoons Fresh orange juice (for glaze)
  • 2 tablespoons Crushed pistachios (optional, for garnish)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flour, ground cardamom, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter and granulated sugar together with a hand mixer or stand mixer until light and fluffy, about 3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Then stir in the orange zest and 80 milliliters of fresh orange juice.

Step 5

Gradually add the dry ingredients to the wet mixture in three additions, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined; do not overmix.

Step 6

Pour the batter into the prepared cake pan and spread it evenly. Tap the pan gently on the counter to remove any air bubbles.

Step 7

Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.

Step 8

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Step 9

To make the glaze, combine the powdered sugar and 2 tablespoons of fresh orange juice in a small bowl. Whisk until smooth. If the glaze is too thick, add a tiny bit more juice. If it's too thin, add a bit more powdered sugar.

Step 10

Once the cake is completely cool, drizzle the glaze over the top, letting it drip down the sides decoratively.

Step 11

Optionally, sprinkle crushed pistachios on top for added texture and flavor.

Step 12

Slice and serve your Orange and Cardamom Cake. Enjoy!
