Ingredients

  • 4 slices Rye bread
  • 2 tablespoons Butter
  • 8 ounces Corned beef
  • 4 slices Swiss cheese
  • 1 cup Sauerkraut
  • 4 tablespoons Thousand Island dressing
  • 4 slices Dill pickle slices (optional)

Directions

Step 1

Preheat your oven broiler to high.

Lightly butter one side of each slice of rye bread and place them, buttered-side down, on a baking sheet.

Pile 2 ounces of corned beef on each slice of bread, spreading it evenly.

Step 4

Add approximately 1/4 cup of sauerkraut on top of the corned beef, spreading it out but leaving a small border around the edge of the bread.

Step 5

Place a slice of Swiss cheese on top of the sauerkraut on each sandwich.

Step 6

Broil the open-faced sandwiches under the preheated broiler for 3-5 minutes, or until the cheese is melted and bubbly. Keep a close eye on them to avoid burning.

Remove the sandwiches from the oven and drizzle 1 tablespoon of Thousand Island dressing over each one.
