Ingredients

  • 15 oz Canned chickpeas (drained and rinsed)
  • 0.5 cup Fresh parsley (chopped)
  • 0.25 cup Fresh cilantro (chopped)
  • 1 Onion (small, diced)
  • 3 Garlic cloves (minced)
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Baking powder
  • 4 tbsp All-purpose flour
  • 0.25 cup Vegetable oil (for frying)
  • 2 Pita bread rounds (halved)
  • 1 Cucumber (sliced)
  • 1 Tomato (sliced)
  • 2 tbsp Tahini
  • 1 tbsp Lemon juice
  • 2 tbsp Water
  • 0.25 tsp Salt (for tahini sauce)

Directions

Step 1

In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, paprika, and 1 tsp of salt. Pulse until the mixture is well blended but slightly chunky.

Step 2

Add the baking powder and flour to the mixture. Pulse again until the mixture holds together when pressed. If needed, add an extra tablespoon of flour.

Form the mixture into 8 small patties, about 2 inches in diameter each.

Heat the vegetable oil in a large skillet over medium heat. Once hot, fry the patties for 3-4 minutes on each side or until golden brown and crisp. Transfer to a plate lined with paper towels to drain excess oil.

To make the tahini sauce, whisk together the tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth. Adjust the water for desired consistency.
