Ingredients

  • 2 cups Uttapam batter
  • 1 medium, finely chopped Onion
  • 1 finely chopped Green chili
  • 2 tablespoons, finely chopped Cilantro (coriander leaves)
  • 0.5 teaspoons, or to taste Salt
  • 2 tablespoons Oil
  • 1 small, finely chopped (optional) Tomato

Directions

Step 1

Prepare the uttapam batter by ensuring it is well-fermented. You can use store-bought dosa batter as well or make it from scratch by soaking 1 cup of rice and 1/4 cup urad dal for 4-5 hours, grinding to a smooth batter, and fermenting overnight.

Step 2

In a bowl, combine the finely chopped onion, green chili, cilantro, and tomato (if using). Add salt and mix well.

Step 3

Heat a non-stick or iron skillet on medium heat and grease it lightly with a little oil.

Step 4

Pour a ladleful of batter onto the heated skillet and spread it gently to form a circle, approximately 5-7 inches in diameter.

Step 5

Sprinkle a portion of the onion mixture evenly over the uttapam before the batter sets.

Step 6

Drizzle a little oil around the edges and on top of the uttapam.

Step 7

Cook on medium heat until the underside is golden and crispy, approximately 2-3 minutes.

Step 8

Flip the uttapam carefully and cook for another 2 minutes on the other side.

Step 9

Once fully cooked, remove from the skillet and repeat the process with the remaining batter and onion mixture.

Step 10

Serve hot with coconut chutney, tomato chutney, or sambar.
