Ingredients

  • 90 grams Butter
  • 150 grams All-purpose flour
  • 0.5 teaspoons Salt
  • 3 tablespoons Cold water
  • 2 tablespoons Olive oil
  • 3 medium Yellow onions
  • 1 teaspoons Granulated sugar
  • 1 teaspoons Fresh thyme leaves
  • 50 grams Gruyere cheese
  • 1 large Egg yolk
  • 2 tablespoons Heavy cream

Directions

Step 1

In a medium mixing bowl, combine all-purpose flour and salt. Add cold butter, cut into small cubes. Use your fingertips or a pastry cutter to rub the butter into the flour until the mixture resembles breadcrumbs.

Step 2

Add cold water, one tablespoon at a time, mixing gently until the dough comes together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 15 minutes.

While the dough chills, heat olive oil in a large skillet over medium heat. Slice the yellow onions thinly and add them to the skillet.

Cook the onions, stirring frequently, for about 20-25 minutes until soft and golden brown. Add sugar and thyme, cooking for an additional 2 minutes. Remove from heat and let cool.
