Ingredients

  • 400 grams spaghetti
  • 4 medium yellow onions
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic
  • 60 ml dry white wine (optional)
  • 50 grams parmesan cheese
  • 0 to taste salt
  • 0 to taste black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta cooking water before draining.

Step 2

While the spaghetti cooks, peel and thinly slice the onions into half-moons. Mince the garlic cloves.

Step 3

In a large skillet or frying pan, heat the olive oil and butter over medium heat until the butter is melted.

Step 4

Add the sliced onions to the skillet, season with a pinch of salt, and cook, stirring occasionally, for 15-20 minutes or until the onions are soft and caramelized. Lower the heat if needed to prevent burning.

Step 5

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.

Step 6

If using white wine, pour it into the skillet and let it simmer for 2-3 minutes until reduced slightly.

Step 7

Toss the cooked spaghetti into the skillet with the caramelized onions. Add a splash of the reserved pasta water and toss to coat the pasta evenly.

Step 8

Stir in the grated parmesan cheese, adding more pasta water as needed to create a creamy sauce. Adjust seasoning with additional salt and freshly ground black pepper to taste.

Step 9

Serve the onion spaghetti immediately, garnished with freshly chopped parsley and extra parmesan cheese if desired.
