Ingredients

  • 4 tablespoons Butter
  • 2 tablespoons Olive oil
  • 6 medium (thinly sliced) Yellow onions
  • 4 cloves (minced) Garlic cloves
  • 1 teaspoon Granulated sugar
  • 1 teaspoon Smoked paprika
  • 1 cup Dry white wine
  • 6 cups Beef stock
  • 1 Bay leaf
  • 3 sprigs Fresh thyme
  • 2 tablespoons Balsamic glaze
  • 0 (to taste) Salt
  • 0 (to taste) Black pepper
  • 1 (sliced) Baguette
  • 2 cups (grated) Gruyère cheese

Directions

Step 1

In a large heavy-bottomed pot, melt the butter and olive oil over medium heat.

Step 2

Add the thinly sliced onions and cook for 10 minutes, stirring occasionally, until translucent.

Step 3

Mix in the minced garlic, granulated sugar, and smoked paprika. Reduce heat to medium-low and cook the onions for an additional 25–30 minutes, stirring frequently, until deep golden brown and caramelized.

Step 4

Deglaze the pot with dry white wine, scraping up any brown bits from the bottom. Let it simmer for 2–3 minutes until the wine reduces slightly.

Step 5

Pour in the beef stock and add the bay leaf and thyme sprigs. Bring the soup to a gentle boil, then reduce the heat to low and let it simmer uncovered for 20 minutes.

Step 6

Stir in the balsamic glaze, and season with salt and black pepper to taste. Remove the bay leaf and thyme sprigs before serving.

Step 7

While the soup simmers, preheat the oven to broil. Arrange baguette slices on a baking tray and toast under the broiler until crisp, about 1–2 minutes per side.

Step 8

Ladle the soup into oven-safe bowls. Top each bowl with a toasted baguette slice and a generous handful of grated Gruyère cheese.

Step 9

Place the bowls onto a baking sheet and broil in the oven until the cheese is melted, bubbly, and golden brown, about 2–3 minutes.

Step 10

Carefully remove from the oven and let cool slightly before serving. Enjoy your Onion Soup with a Twist!
