Ingredients

  • 4 pieces Chicken breasts
  • 3 large Yellow onions
  • 3 pieces Garlic cloves
  • 2 tablespoons Butter
  • 2 tablespoons Olive oil
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 1 tablespoon Flour
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Slice the onions into thin rings and mince the garlic cloves. Set them aside.

Step 2

Season the chicken breasts with salt, black pepper, and paprika on both sides.

Step 3

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat.

Step 4

Add the chicken breasts to the skillet and sear for 3-4 minutes per side, until golden brown. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, add the remaining butter and olive oil. Stir in the sliced onions and cook on medium heat, stirring occasionally, for 10-12 minutes, until the onions are caramelized and golden brown.

Step 6

Add the minced garlic and dried thyme to the onions, and cook for another 1-2 minutes until fragrant.

Step 7

Sprinkle the flour over the onions and stir to coat evenly. Cook for 1 minute to remove the raw flour taste.

Step 8

Gradually pour in the chicken broth while stirring continuously to create a smooth mixture. Bring to a simmer.

Step 9

Stir in the heavy cream and mix well to combine. Taste and adjust the seasoning if needed.

Step 10

Return the seared chicken breasts to the skillet, nestling them into the onion sauce. Reduce the heat to low, cover, and simmer for 20 minutes, or until the chicken is fully cooked and tender.

Step 11

Serve the onion-smothered chicken with the sauce spooned over the top. Garnish with fresh parsley if desired. Pair with rice, mashed potatoes, or crusty bread.
