Ingredients

  • 8 sheets Phyllo dough sheets
  • 4 tablespoons Unsalted butter, melted
  • 2 tablespoons Olive oil
  • 4 medium Yellow onions, thinly sliced
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 4 ounces Goat cheese
  • 1 tablespoon Honey
  • 2 tablespoons Fresh parsley, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 20 minutes until the onions are caramelized and golden. Stir in thyme, salt, and black pepper. Remove from heat and set aside.

Step 3

Lay one sheet of phyllo dough on a baking sheet lined with parchment paper. Lightly brush the sheet with melted butter. Layer another phyllo sheet on top, brushing with more butter. Repeat until all 8 sheets are layered, brushing each one.

Step 4

Evenly spread the caramelized onions over the phyllo, leaving a 1-inch border around the edges.
