Ingredients

  • 2 large onions, thinly sliced
  • 150 grams gram flour (besan)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon red chili powder
  • 0.5 teaspoon turmeric powder
  • 2 garlic cloves, minced
  • 2 tablespoons fresh coriander leaves, chopped
  • 1 teaspoon salt
  • 120 ml water
  • 500 ml vegetable oil, for deep frying

Directions

Step 1

In a large mixing bowl, combine the gram flour, baking powder, ground cumin, ground coriander, red chili powder, turmeric powder, and salt.

Step 2

Gradually add the water to the dry ingredients, stirring with a whisk until you have a thick batter.

Step 3

Add the sliced onions, minced garlic, and chopped coriander leaves to the batter, mixing until the onions are well coated.

Heat the vegetable oil in a deep frying pan over medium heat. You will need enough oil to submerge the bhajis.

To test if the oil is ready, drop a small amount of batter into the oil. If it sizzles and rises to the surface, the oil is ready.
