Ingredients

  • 3 medium, sliced Onions
  • 100 grams Besan (gram flour/chickpea flour)
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 1.5 teaspoons Salt
  • 300 milliliters Water
  • 2 tablespoons, chopped Cilantro
  • 1 tablespoon Lemon juice

Directions

Step 1

Heat vegetable oil in a pan over medium heat. Add mustard seeds and cumin seeds, and let them sizzle for about 30 seconds until fragrant.

Step 2

Add sliced onions to the pan and sauté until they turn golden brown, approximately 6-8 minutes.

Step 3

In a separate bowl, mix besan with 100 milliliters of water to form a smooth, lump-free paste.

Step 4

Once the onions are cooked, reduce the heat to low and add the besan paste to the pan, stirring continuously to prevent lumping.

Step 5

Gradually add the remaining 200 milliliters of water, stirring to blend the besan and onions into a smooth sauce.

Step 6

Stir in turmeric powder, red chili powder, garam masala, and salt. Increase the heat to medium and bring the curry to a gentle boil while stirring occasionally.

Step 7

Simmer the curry for about 5-7 minutes, until the raw taste of besan vanishes and the curry thickens.

Step 8

Adjust the consistency by adding more water if needed; it should be a thick sauce-like consistency.

Step 9

Once the curry is thickened, remove from heat, stir in lemon juice to enhance the flavors, and garnish with chopped cilantro.

Step 10

Serve hot with steamed rice or flatbreads such as chapati or naan.
